Finding out you can’t eat dairy, sucks. Finding out you also can’t eat eggs makes it that more difficult to find foods that meet these requirements, and, well, taste good!
After quite a few so-so cakes, we stumbled across this one, and it is FANTASTIC. We’ve served it to a number of “dairy-eaters” and they too, think it’s delicious. You honestly wouldn’t even know it’s vegan…it’s that good.
The BEST vegan, chocolate cake
1 1/4 c flour
1 c sugar
1/3 c unsweetened cocoa powder
1 tsp baking soda
1/2 tsp salt
1 c warm water
1 tsp vanilla extract
1/3 c vegetable oil
1 tsp cider or apple cider vinegar
Sift dry ingredients together. Add wet ingredients & mix until well blended. Pour into 8×8 or 9″ round pan, and bake at 350 degrees for 30 minutes (or until toothpick comes out clean). Cool on wire rack until cool, and then ice with desired icing.
* I’ve discovered the icing sugar bag has the best icing recipe (thanks, Shannon!). I substitute butter with vegan margarine, and substitute the milk with “So Delicious” coconut milk beverage. Feel free to play around with what you’ve got!
