the easiest granola bars you’ve ever made

 

I found this recipe for no-bake granola bars on Pinterest, and had to give them a try.

The author claims they are easy, you don’t have to bake them, and they only take around 3 minutes. 3 minutes?!! Sure, I have 3 minutes!

It turns out, they are that easy. She wasn’t kidding about the time either, and they are delicious. 

My variation:

1/4 c vegan Becel
1/4 c honey
1/3 c brown sugar
1 tsp vanilla extract
2 c quick oats
1/2 c granola (I used Granola King granola)
1 c rice krispies
a handful each of chopped almonds, dried craisins, chopped dates & toasted pecans

In a saucepan, mix the Becel, honey, and sugar over medium heat until bubbly and smooth (about 2 minutes). Add vanilla and stir.

Combine oats, rice krispies, and other granola-bar type items (nuts, fruit, chocolate, etc) in a bowl. Stir. Add sugar/margarine mixture and mix to coat dry ingredients well.

Pour mixture on to lightly greased cookie sheet and press firmly. You can play around with it, depending on how thick you want your bars.
*I sprinkled dairy-free chocolate chips on top once it was pressed in to shape. This way they don’t melt!*

 

Once the mixture has cooled, slice it in to bars. Voila!! That’s it!
